Uncle Jerry's Hush Puppies
1 Tbs flour
1 Cup fine white cornmeal
3/4 tsp salt
2 tsp baking powder
1 medium onion (minced)
1 egg
6 Tbs milk
Mix dry ingredients, add onions, eggs and beat well. Add milk and beat batter till smooth. Drop by Tablespoons into two inches hot fat.
Uncle Lem's Pancakes
2 Cups Bisquick
1 2/3 cups milk
1 egg
 
Mom's Appesauce Cake
1/4 Cup Oil
2 Lg Eggs
2 Cups Applesauce (Motts)
1 pkg Duncan Hines Spice Cake Mix
1 Box Sun Maid Baking Raisins
Chopped pecans (optional)

1 Can Cream Cheese Frosting Mix

Preheat oven to 350°

Combine all ingredients in a 9 x 13 baking pan. Stir until blended.

Bake for 35 to 45 minutes.

Top with powdered sugar or cream cheese icing.

Mom's Goulash
3 TBS oil
1 medium onion, chopped
1 medium geen bell pepper, chopped
1 lb hamuburger

1 can stewed tomatoes
1 can tomato puree
1/2 tsp basil
salt & pepper to taste

2 cups (when raw) cooked macaronni

Saute onions and peppers in oil until onions are transluscent. Add hamburger and continue cooking till brown.

Add tomatoes, puree, basil, salt and pepper.

Fold in cooked macaronni.

Cover and simmer for 20 minutes.

Grandma Toddy's Coleslaw
1 1/3 Cub Mayonnaise
3 Tablespoons White Vinager
2 Tablespoons + 2 Teaspoons sugar
2 Tablespoons milk
2 Tablespoons sour cream

Dash of Salt

6 Cups chopped Cabbage (1 head)
1/2 Cup sherred carrot

Combine first 5 ingredients in a bowl and blend until smooth with electric mixer. Add cabbage and carrots and toss well

Cover and chill overnight in the refrigerator. The flavors fully develope after 24 to 48 hours.

Grandma Toddy's Vegetable Soup
2 1/2-3 Lb Beef short ribs
6 Cups water
2 Cups V-8 or Tomato juice
1/3 Cup Chopped Onion
1 Tbs Salt
2 Tsp Worchestershire
1/4 Tsp chili powder
2 bay leaves
3 Tsp beef bouillion

Optional Vegetables
1 Cup celery
1 Cup Carrots
1 Cup Potatoes
1 Cup Cabbage
3/4 Cup barley
Simmer first ingredients for about 5 hours. Remove bay leaves and bone the meat removing excess fat.

Add optional diced vegetables and simmer 1 hour.

Nan's Bran Muffins
3 cups bran cereal
1 cup boiling water
1/2 cup cooking oil
2 1/2 cup flour
2 1/2 tsp baking soda
1 tsp salt
1 1/2 cup sugar
2 eggs
2 cups buttermilk
Combine 1 cup cerial with boiling water. Cool. Add oil.

Sift dry ingerdeints together in one bowl

Combine eggs and buttermilk in another bowl.

Mix dry ingredients and milk mixture and stir in remaining 2 cups of cereal. Fold in bran with water mixture.

Bakd 350° for 20 minutes.

Add rasins, dates, pecans as desired.

Dee Dee's Cube Steaks With Zing
4 Cube Steaks
2 TBS Oil
Flour
1 Pkg Lipton Onion Soup
1/3 bottle of Heinz Chili Sauce
1 Cup Water
(dash of Tabasco optional)
Dredge the cube steaks in the flour and brown in oil.

Mix Soup Mix, chili sauce, tabasco and water and pour over meat. Cover and simmer for 25 minutes.

Serve with yellow rice using gravy from the meat.

Dee Dee's Green Stuff
1 large box lime Jello
2 cups boiling water
Dash of salt
1 8 oz package cream cheese
1 cup milk
1 20 oz can crushed pineapple (drained)
Make the Jello with the boiling water and add a dash of salt.
Remove from heat and let it cool. Beat the cream cheese in a mixer, slowly adding the milk. Beat until smooth and then add the Jello. Add pineapple and stir well.
Pour the mixture into a large mold or dish and refrigerate until set. This may take several hours.
Betty Dressel's Pumpkin Pie
1 and 1/2 cups pumpkin
2 tablespoons melted butter
1 teaspoons cinnamon
1 teaspoons ginger
1/4 teaspoons Mace
1/4 teaspoons Cloves
1 teaspoons salt
2 eggs
1/2 cup dark brown sugar
1/2 cup sugar
1 cup Milk
2 tablespoons Flour

(Ground Mace is hard to find these days, but you may find it online.)

Mix spices with pumpkin and butter

Beat eggs until frothy. Add sugars, flour and milk to the eggs and blend.
With a "Gentle Hand", fold the egg mixture into the pumpkin mixture.
Makes 2 9 inch pies or one Deep dish pie. Cover the edges of the pie
crusts with foil to prevent them from burning.

Bake at 400 degrees for 40 - 45 minutes or until the top of the pie cracks a bit.

Barbara Moore's Strawberry Pizza
Crust
1 1/2 C Plain Flour
1 C margarine
1/4 C Brown Sugar
1/4 C Chopped Pecans

Mix all indgredients. Spread in bottonm of Pizza Pan
Bake 15 minutes at 400 degrees. Cool

Filling:
1 (8 oz pkg) Cream cheese
3/4 C powdered sugar
1 (9 oz) Container of Whipped topping

Mix cream cheese and powdered sugar. Fold in whipped topping. Spread over cooled crust.

Topping:
1 (3 oz pakg) Strwberry gelatin
1 C water o strwberry juice
1/2 C sugar
Dash of salt
4 TBS Cornstarch
4 C Sliced Strawberries
Mix gelain, suagr salt and 1/2 cup water or juice. Dissolve cornstarch in 1/2 C water or juice. stir into gelatin misture. Cook over medium heat until thickened.
Add strwberries and cool. Spred on top of cream cheese layer. Chill well.
